Protein is the most expensive thing on the plate

Chicken, beef, fish — whatever the protein is, it costs the kitchen more per ounce than anything else it's serving. Rice is cheap. Pasta is cheap. Bread is nearly free. So when a restaurant needs its numbers to work, there's one obvious lever: shrink the expensive part.

Why your plate is mostly rice

That's why restaurants hand you a little bitty portion of protein buried under a mountain of rice and nonsense. They have to fill the plate with something, and it isn't going to be the thing that costs the most.

To be clear: they're not evil, and they're not out to get you. They're well-run businesses that have to be profitable while carrying a ton of expensive costs — rent, staff, the whole operation around the food. When you pay for a restaurant meal, you're paying for all of it. The natural move is to quietly shrink the protein portion.
